Appalachian Coal Dust Irish Soda Bread

Ingredients

  • 4 cups all-purpose flour

  • 1 tsp baking soda

  • 1 tsp salt

  • 3-4 Tbsp Appalachian Coal Dust

  • 1¾ cups buttermilk

  • 4 Tbsp cold butter, cubed

  • 1 cup shredded sharp cheddar (or cheese of choice)

  • 2 tablespoons of parmesan cheese

  • Optional: ½ cup chopped pepperoni

Directions

  1. Heat oven to 425°F. Line a baking sheet with parchment.

  2. Mix flour, baking soda, salt and Coal Dust.

  3. Cut in the cold butter until the mixture is crumbly.

  4. Fold in cheddar (and pepperoni, if using).

  5. Add buttermilk and gently mix just until a shaggy dough forms. Don't overwork it.

  6. Shape into a round loaf about 1½–2 inches thick.

  7. Cut a deep X across the top.

  8. Bake 35–45 minutes, until golden and the center is cooked through.

  9. Let rest about 15 minutes before slicing.
