Sandy Buns Cookies

Sweet, smoky, and just spicy enough to get you in trouble

Ingredients:

1 cup (2 sticks) unsalted butter, softened

1 cup packed brown sugar

1/4 cup molasses

1 large egg

2 1/4 teaspoons Sandy Buns Spice Mix

1/4 teaspoon salt

2 cups all-purpose flour

1/2 teaspoon baking soda

Drill

Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.

In a large mixing bowl, cream together the butter and brown sugar until light and fluffy.

Add molasses and egg, and beat until fully combined.

Stir in the Sandy Buns Spice Mix and salt.

Add the flour and baking soda. Mix just until combined—don’t overmix.

Scoop dough into 1-inch balls. (Optional: Roll in cinnamon sugar for a crackled top.)

Place on baking sheet about 2 inches apart.

Bake 10–12 minutes, until edges are set and centers look just slightly underdone.

Let cool on the sheet for 2–3 minutes, then transfer to a wire rack to cool completely.
